Doing Something Different For The April Ultimate Blog Challenge

Happy April Fools’ Day! I promise this is not going to be some lame April Fool’s joke. There are others who are so much more clever than I am at pulling those stunts.

For the month of April, I will post a recipe each day to help people make healthier food choices. If you try my recipes, you’ll find that you can eat a healthy diet and still enjoy your food. Many of the recipes will be vegan, although today’s will not.

This meal was an experiment using some spices I don’t typically use. It came out so delicious and moist I will definitely make it again.

This recipe lasted for two meals and the spice got a little stronger with reheating. I’m warning you so you can adjust according to your palate.

Marinated Mahi-Mahi

Ingredients
  

  • 1 Tbsp fresh lime juice
  • 1 tsp red pepper flakes
  • 1/2 cup raw, unfiltered, local honey
  • 1/2 tsp cardamom
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 Tbsp liquid aminos
  • 3 tsp chili powder
  • 4 fillets mahi-mahi, thawed

Method
 

  1. Whisk all ingredients except mahi-mahi together as a marinade.
  2. Marinate fish in the prepared marinade for at least an hour making sure all the fish is covered or you flip it for even coverage
  3. Bake at 375 degrees Fahrenheit until flaky and opaque
