Doing Something Different For The April Ultimate Blog Challenge

Happy April Fools’ Day! I promise this is not going to be some lame April Fool’s joke. There are others who are so much more clever than I am at pulling those stunts.

For the month of April, I will post a recipe each day to help people make healthier food choices. If you try my recipes, you’ll find that you can eat a healthy diet and still enjoy your food. Many of the recipes will be vegan, although today’s will not.

This meal was an experiment using some spices I don’t typically use. It came out so delicious and moist I will definitely make it again.

This recipe lasted for two meals and the spice got a little stronger with reheating. I’m warning you so you can adjust according to your palate.

Marinated Mahi-Mahi

Ingredients
  

  • 1 Tbsp fresh lime juice
  • 1 tsp red pepper flakes
  • 1/2 cup raw, unfiltered, local honey
  • 1/2 tsp cardamom
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 2 Tbsp liquid aminos
  • 3 tsp chili powder
  • 4 fillets mahi-mahi, thawed

Instructions
 

  • Whisk all ingredients except mahi-mahi together as a marinade.
  • Marinate fish in the prepared marinade for at least an hour making sure all the fish is covered or you flip it for even coverage
  • Bake at 375 degrees Fahrenheit until flaky and opaque
