Method
- Place potatoes, vinegar, salt and garlic in a large saucepan and cover with water.
- Bring to a boil. Turn temperature down and allow potatoes to boil about 20 minutes or until tender.
- Drain and cool
- Preheat oven to 450degrees Fahrenheit
- Coat baking pan with non-stick olive oil spray
- Toss the potatoes in the oil and put in baking pan
- Roast for about 20 minutes or until crispy and brown
- Season to taste with salt and pepper
