Red Lentil Stew

This recipe can be made with or without coconut milk...I choose to make it with.

Ingredients
  

  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp curry powder
  • 3 cups vegetable broth
  • 2 tbsp tomato paste
  • 28 oz can whole tomatoes
  • 1 1/2 cups red lentils, dry
  • 1/2 lemon juice
  • 2 tsp garam masala
  • 1 can full fat coconut milk optional
  • quinoa or brown rice

Equipment

  • 1 Slow cooker but you can use an Instant Pot instead

Method
 

  1. Put all ingredients except coconut milk in the slow cooker and cook until lentils are soft
  2. At the end, stir in coconut milk and cook another 30 minutes
  3. Serve over quinoa or brown rice
