Red Lentil Stew

This recipe can be made with or without coconut milk...I choose to make it with.

Equipment

  • 1 Slow cooker but you can use an Instant Pot instead

Ingredients
  

  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp curry powder
  • 3 cups vegetable broth
  • 2 tbsp tomato paste
  • 28 oz can whole tomatoes
  • 1 1/2 cups red lentils, dry
  • 1/2 lemon juice
  • 2 tsp garam masala
  • 1 can full fat coconut milk optional
  • quinoa or brown rice

Instructions
 

  • Put all ingredients except coconut milk in the slow cooker and cook until lentils are soft
  • At the end, stir in coconut milk and cook another 30 minutes
  • Serve over quinoa or brown rice
