I highly recommend Karen Sammer to be your nutritional coach in order to help you meet your health goals. As a 120 lbs 23 year old woman, I have struggled with genetically high cholesterol and triglyceride levels. At age 19 I was put on 40mg of Crestor and after two years I started to feel the side affects of body aches and muscles pain from this medication. In an effort to take control of my health, Karen guided me in making the necessary changes to live a mostly vegan lifestyle. At the beginning of my 6 month journey with Karen I would not have believed you if you told me that I would no longer crave my weaknesses of cheese, ice cream, or meat like I did before working with Karen. Through bi-monthly meetings, recipes, and daily food logs, Karen helped keep me accountable in reaching my goals and helped me understand how to fuel my body with whole foods that benefit me. As a nutritional coach and now friend, Karen helped me bring my total cholesterol levels down from 262 to 190, LDL from 141 to 87, and HDL from 63 to 84. My triglycerides also dropped dramatically from 289 to 94. Not only are the results of a plant based diet shown in my blood, but I also feel less bloated, sleep better at night, and have more energy to enjoy life. I am so thankful for Karen's guidance and coaching to help me take control of my life and health.
Prior to working with Karen, my health was spiraling. I had blood pressure issues, and my diabetes was according to my doctor, "out of control." I was sent home from work a few times and told not to return until I had my health issues under control. All this changed when I started working with Karen.
Karen spent a lot of time with me, getting to know me as a person. She was not only concerned about my medical situation but cared about my mental, personal, and spiritual well being as well. I was deeply moved and touched by her philosophy of Cura Personalis...care for the whole person.
Together, we worked out a realistic strategy for me to get better. I found Karen to be compassionate, an excellent listener, and very practical and realistic. Her compassion and care is coupled with her excellent knowledge and understanding of the science behind her work. She was with me every step of the way, coaching me and supporting me. She was there when I needed her.
Within a few months my health took a dramatic turn for the better. During my last check up my numbers were according to my doctor, "the best they have ever been." My blood pressure is normal and my diabetes is no longer out of control and getting off medication is within sight.
I will be forever grateful to Karen for working with me. She's a lifesaver!
I have known Karen for some time, but not as a health coach. When I bumped into her last September 2017 and she shared with me this new career she was pursuing, I was intrigued. I had fallen into a bit of a slump and wasn’t feeling well over all and had gained some very unwanted pounds. I knew what I needed to do, get myself off of the emotional roller coaster (after recently divorcing), stop making poor food choices, and get some physical activity back into my life.

My top three goals upon starting the six-month program were to eat better and to feel better; choose foods that are healthy and good for my body; so that I can work better and feel better for my family and my career.
Karen was able to help me work toward these goals by weekly calls to keep me accountable to the goals that we have established. Karen answered my questions regarding certain food choices.
The biggest tangible change I have noticed since beginning the program has been that I now realize I can make tasty recipes that are healthy and not too much work. Also I now understand what foods should be on my plate to keep me fit and feeling well.
I would describe Karen as very knowledgeable about choices in healthy eating and
feeling alive and making good decisions on what would best serve me.

Working with Karen to uncover how what we eat can impact our health and daily lives has been a complete eye-opener for me. Cancer patients, and frankly patients of any kind and individuals seeking to avoid illness and maximize their wellness, will benefit from understanding how our bodies react to food so much more than if we just listened to the marketing and labels provided. Karen has delivered countless examples, short and unabridged explanations of why different diet intakes can render traditional medical and maintenance paths useless compared to our true goals of healing and feeling better each day. Karen breaks down this information to be consumed (sorry for the pun) by anyone who is or can be afflicted, and who is listening.

FAQs - do we want these?
Wine contains a lot of sugar, even dry wine. Wine has been glorified for its supposed "health" benefits, but the risks far outweigh any marginal benefits you might enjoy, especially for women. I do encourage abstinence from alcohol during this program. Of course, the choice is yours. The more you follow the guidelines of the program, the more successful you will be.
There is no specific eating plan but there will be suggested foods to avoid to maximize the benefits of the program.
Yes you can but not as a substitute for medical advice or intervention. It will be important that you monitor your blood sugar closely and inform your medical provider of your plans to participate in the program.
As with any transformative undertaking, having the support of those close to you makes success easier to attain. That doesn't mean that you can't do this on your own...because you will not be on your own. We will all support each other in a secret Facebook group. It's also a good program to introduce to the rest of the family. Everyone can benefit from eliminating processed sugar from their diet.
Success will be yours if you follow the guidance in the program. No one will be left behind. There will be group support in the secret Facebook group and access to me between sessions. It may not be easy but I promise you, if you stick it out, you will feel like a different person.
